Kale, Chicken and Squash Soup
Ingredients
- 1 pound ground chicken ( could use chicken sausage too )
- 1 bunch fresh kale wash and ripped off the stem - then chopped
- 1 (14 oz) pack butternut squash cubed ( can find already chopped in produce section now - great time saver)
- 1 onion chopped
- 3 garlic cloves chopped
- 1-1/2 tbsp Herbs to Provence
- 7-8 cups chicken stock
- Parmesan cheese ( for topping the soup at the end )
- 2-3 tbsp olive oil extra virgin
- salt and pepper

Instructions
- In a large pot on medium heat add the onion with a pinch of salt and cook about 6 minutes until soft and then add the garlic and cook another 2 minutes
- Next add in the ground chicken, herbs to Provence and some salt and pepper and cook until no longer pink
- Next add in the squash with some more salt and pepper and mix to combine and then add in the chicken stock and simmer about 25 minutes until the squash is tender and all the flavors have combined
- Last add in the chopped kale and cook about 10 minutes until kale is wilted and cooked through, top with parmesan cheese and enjoy!!
- This soup is great and even better the next day!
