Lasagna with Chicken, Ricotta Cheese and Spinach Noodles
Ingredients
- 1 Store bought plain Rotisserie chicken - skin and meat off the bone and chopped ( or shredded)
- 1 package no bake Spinach Lasagna noodles ( I got the no boil ones at Fresh Market )
- 1 jar healthy marinara sauce
- 1 -1/2 cups Part- Skim Ricotta cheese
- 1/3 cup Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1/2 medium onion diced small
- 2 garlic cloves minced
- 1 tablespoon olive oil
- 2 tablespoons chopped flat leaf parsley
- 2 tablespoons chopped fresh basil
- salt and pepper

Instructions
- In a pan on medium heat add the olive oil, onion and some salt and cook about 5 minutes until onion is soft and then add in the garlic and cook another 2 minutes
- Next add in the chicken, basil, parsley and some salt and pepper and cook about 3 minutes until everything is combined and then turn off the heat and set aside
- In a mixing bowl add the ricotta cheese, parmesan cheese and some salt and pepper and mix well to combine and then set aside
- In a baking dish add a little of the marinara sauce to the bottom of it and start layering - first add the spinach noodles then top with some of the ricotta mixture, then chicken, then the marinara and then a handful of the mozzarella cheese and repeat this step 3 times on the last layer top with last spinach noodle and just top that layer with the rest of the mozzarella cheese
- Bake at 325 degrees for about 30 minutes or until done and top is golden and enjoy!!
