2-3tbsplemon and garlic olive oilI used " Milanese Gremolata" from The Olive Oil Store - you can find this at the olive oil store or whole foods and specialty stores - if you can't simply infuse olive oil with some lemon zest and minced garlic- let sit for at least 30 minutes drain and use over the pasta
Steam the vegetables in the bag in the microwave and then add them to a sauté pan and season them with salt and pepper and add 1 tbsp of the lemon and garlic olive oil and mix to combine.
Next, cook the pasta to package instructions, drain and then transfer the pasta to the sauté pan with the vegetables and turn on heat to low. ( remember to reserve some of the pasta water)
Add another tbsp of the lemon olive oil and a bit of the pasta water tossing it together with tongs until earthing is warmed through. Then add some more salt and pepper and some parmesan cheese and serve! (add more lemon oil if needed to taste)
My daughter has been wanting to try more vegetarian dishes so I came up with this for a fast and easy dinner and she loved it. It is also a great side dish that is light but delicious.
