Lightened Up Jalapeño Poppers

Ingredients
- 4-6 jalapeno peppers rinsed, cut in half and seeds out
- 1/2 cups light cream cheese
- 1/4 teaspoon garlic powder
- 1 ( 3 inch piece ) hardwood smoked turkey sausage chopped small- I use Butterball ( can find this near the lunch meat in the grocery store)
- 3 tbsp panko bread crumbs
- 1 tbsp Parmesan cheese
- salt and pepper
- Olive oil cooking spray

Instructions
- In a small bowl add the cream cheese, garlic powder and some salt and pepper and mix well to combine.
- Meanwhile, in a small pan add the turkey sausage and cook until browned and set aside.
- Spray the bottom of the jalapeño halves with some olive oil cooking spray and then simply add some cream cheese to each half.
- Next, top the cream cheese with a few pieces of the turkey sausage and place them on a wire rack over a baking sheet. Then top each one with some Panko bread crumbs and a bit of parmesan cheese.
- Bake them at 350 degrees for about 22 minutes and then once they are done I like to turn on the broiler for a minute or 2 to make sure the bread crumbs get a little brown.
- These are a lighter version of the original and they are delicious even my daughter loves them! :)
