Lighter Turkey Swedish Meatballs

Ingredients
Meatballs
- 1 pound ground turkey
- 1/4 cup Italian seasoned panko breadcrumbs
- 1/4 cup low fat milk
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon parsley chopped- or you can find LiteHouse instant fresh Herb jars in produce section now
- 1 pinch nutmeg
- 1 egg
- salt and pepper
Sauce
- 2 tbsp light butter
- 2 tbsp flour
- 1 cup low fat milk
- 2/3 cup chicken stock
- 1 tbsp worcestershire sauce
- 1 pinch nutmeg
- salt and pepper
- 2 tbsp extra virign olive oil

- For the meatballs: In a large mixing bowl add the bread crumbs and milk and stir to soak the bread crumbs and then add in all the other ingredients except the turkey. Once all the ingredients are mixed add in the ground turkey and mix to combine but do not over mix.
- Then roll meatballs in your hand and add them to a large sauté pan with the olive oil and cook for about 10 minutes. Next, take the meatballs out and set aside, and in the same sauté pan wipe it out with a paper towel to get excess oil out.
- Then add to the same pan the butter and flour and stir around a few minutes to get the raw flour taste out. Next, slowly add in the milk and stock and whisk well a few minutes as the sauce thickens. Then add in the nutmeg, worcestershire sauce and some salt and pepper and continue to stir a minute or so.
- Last, add the meatballs into the sauce and cook about 5-8 minutes longer until all the flavors have combined and meatballs are warmed through and serve!
- I created this recipe last night and it is SO amazing and taste just like the original with out all the fat and calories! :)
