Marinated Chipotle Maple Pork Tenderloin

Ingredients
- 1 pork tenderloin
- 1/4 cup canned chipotle peppers in sauce
- 1/4 cup maple syrup
- 1/4 cups extra virgin olive oil
- 1/3 cup chicken broth
- salt and pepper

- First, in a small food processor add the chipotle peppers, maple syrup, extra virgin olive oil and some salt and pepper in a food processor and blend until smooth. Next, pour the marinade over the pork tenderloin in a large Ziploc bag and marinate for at least I hour in the refrigerator.
- Once your pork tenderloin is marinated, sear it on all sides in a hot skillet until you get a crust on each side for about 10 minutes.
- Then transfer your seared pork tenderloin to a baking dish and add the chicken broth to the bottom of the dish to keep the pork moist and prevent from burning.
- Bake your pork tenderloin at 375 degrees for about 30 minutes depending on the size of your pork. The internal temperature should be at least 145 degrees and can be slightly pink.
- Lastly, let your pork tenderloin rest for at least 10 minutes covered with foil and then slice on a cutting board and serve!
- I LOVE this recipe it is one of my favorite pork recipes I have created and I hope your family loves it as much as I do! I serve this with chopped chives over the top and chive mash potatoes and asparagus, but serve it with your favorite sides.
