Marinated Cucumbers

Ingredients
- 2 Cucumbers peeled
- 1/4 tesp toasted sesame oil
- 2-3 tbsp rice wine vinegar
- 2 tbsp olive oil extra virgin
- 1 or 2 tbsp low sodium soy sauce ( to taste )
- Cracked black pepper to taste
- Roasted Sesame Seeds ( optional as a topping )

Instructions
- Slice cucumbers fairly thin.
- In a bowl combine the next 5 ingredients like you would a salad dressing and whisk together.
- Add the cucumbers and stir to coat them evenly, then store in the refrigerator to let them absorb all the flavors.
- The longer they marinate the more flavor they absorb but you can also snack on them right away!
