Instructions
  1. First, mix together you chicken marinade ingredients and pour it into a large Ziploc bag with the chicken tenders. I let mine marinate overnight but you can let it sit as long as you have in the refrigerator. The longer you marinate it the better and stronger those flavors will be. The I used a grill pan and add some olive oil to the pan and cooked the chicken tenders on medium high neat for a about 4 minutes per side until cooked through.
  2. Then transfer you chicken tenders to a cutting board and cut the chicken into bite side pieces. This is the time to also prep all our toppings and get everything into little bowls for serving.
  3. The only topping you need to do anything with is the cucumbers, slice them and place into a small bowl and pour some rice wine vinegar over them. These only need to sit a few minutes but it gives them a quick pickle and makes them taste great.
  4. The way I like to serve these is on a large tray with the hoisin dipping sauce and cucumbers. However, you can also set it up and let everyone build their own lettuce wrap.
  5. The last thing to do is simply layer all your ingredients, I add the slaw mix first and then the chicken and toppings. This recipe is so light and delicious and I hope you love them as much as I do.
