  1. Spray a mini muffin tray with the olive oil cooking spray and set aside. Next, add whatever fillings you like and starting with the vegetable first at the bottom.
  2. Next, add the cheese on top of your vegetables and you can switch them up like I did for my daughter and I.
  3. Then add you eggs to a small pitcher to make it easy to pour and then add your garlic powder, milk, basil and some salt and pepper and beat until mixed. Next, pour the egg mixture over each mini muffin and this should fill 12 spots.
  4. Then bake at 350 degrees for 10-12 minutes and they should come out very easy - use a butter knife to help you slide them out.
  5. These are so delicious and they are great for a brunch party or just a regular breakfast during the week! :)
