Mushrooms with Tarragon
super easy
Ingredients
- 1 pack button mushrooms stems removed and wiped clean with damp paper towel
- 1/3 white onion - diced
- 1 teaspoon fresh Tarragon minced
- 1 tbsp fresh flat leaf parsley minced
- 1/4 cup low sodium chicken stock or vegetable broth
- 1/2 lemon
- 1 clove garlic minced
- 1-2 tbsp olive oil
- 1 tbsp light butter
- salt and pepper

Instructions
- Over a medium pan add in olive oil and onion ( a pinch of salt ) and cook until tender about 5 minutes.
- Then add in the garlic for another two minutes.
- Next add in the mushrooms, tarragon, juice of 1/2 of lemon, chicken stock, butter, salt and pepper and cook for about 8 minutes and then add in the parsley and cook for another 2 minutes.
