Mexican Turkey Lasagna Roll-Ups

These ground turkey Mexican style lasagna roll-ups are easy to make and absolutely delicious! I also used gluten free lasagna noodles and this recipe is a crowd pleaser every time.

These ground turkey Mexican style lasagna roll-ups are easy to make and absolutely delicious! I also used gluten free lasagna noodles and this recipe is a crowd pleaser every time.

Ingredients
- 1 boz gluten free brown rice lasagna noodles
- 1 15 oz can red enchilada sauce
- 1 15 oz can dices tomatoes I put them in a food processor to get them a little smaller but you can skip this step
- 2 cups Mexican shredded cheese blend
- 1 15 oz can refried beans
- 1 pound ground turkey
- 1 pack taco seasoning mix

Instructions
- First prep all your ingredients - cook your ground turkey with the taco packet instructions and then set aside. Place you other ingredients in mixing bowls so that everything is ready to assemble. I cooked my lasagna noodles to package instructions while doing this and then get ready to assemble.
- First lay out one lasagna noodle and then top it with a layer of refined beans, then the ground turkey mixture and last top with the cheese.
- Next, start at the end and roll the noodle up and place it on a baking dish seam side down with a layer of the red enchilada sauce on the bottom of the baking dish.
- I like to really stuff each roll- up so I got six good size lasagne roll-ups in there but you can use a bigger dish and make as many as you need.
- Next, I top each lasagna roll-up with more red enchilada sauce and then I add a heaping tablespoon of the diced tomatoes on each one. Last, I top each one with a heaping handful of more of the Mexican cheeses blend. Bake this as 350 degrees for 20 minutes until the inside is heated though and the cheese on top is melted.
- Then when its done simply top it with your favorite toppings, I used sour cream. chives and some diced avocado.
