Tomato, Mozzarella & Basil Egg Sandwich
Ingredients
- 1 large organic egg
- 1-2 slices tomato
- 3-4 large fresh basil leaves
- 1-2 tbsp shredded mozzarella cheese
- 1 slice Rye or Multigrain Sprouted bread
- 2 tesp light healthy butter
- salt and pepper

- In a small pan heat one teaspoon of the butter and cook the egg "over medium" with some salt and pepper and then turn off the heat and cover it to keep warm
- Next coat the slice of bread with the other teaspoon of butter and then put it in the toaster and cook until almost done - then take it back out
- Last, top the toast with the tomato slices and some salt and pepper then the basil and cheese and put it back into the toaster just until the cheese melts and then take it back out and top with the egg and enjoy!
- I make this for breakfast all the time it's so good! :)
