One Layer Chicken and Cheese Lasagna
Ingredients
- 1 Store bought plain Rotisserie chicken skin and meat off the bone and shredded
- 8 brown rice gluten free Lasagna noodles only need 8 bc this has one layer ( I used the no boil ready to bake kind )
- 1 jar healthy marinara sauce
- 1/2 bag mixed shredded chedder blend cheese
- 1/4 cup parmesean cheese
- 1 shallot chopped
- 2 cloves garlic chopped
- 1/4 cup flat leaf parsely chopped
- 1 tbsp extra virgin olive oil
- 1 teaspoon dried italain seasoning
- salt and pepper

- I make this when I need a quick no fuss dinner for my daughter and it is VERY kid friendly! Hence the "one layer" :)
- In a large sauté pan add the oil, shallot and a pinch of salt and cook for 5 minutes and then add in the garlic and italian seasoning and cook for another 2 minutes. Next add in the shredded chicken, some salt and pepper and mix to combine.
- Next add in 1 cup of the marinara sauce and the flat leaf parsley and stir to combine. Then add in about 1/2 cup of the shredded cheese blend and 1/2 the parmesan cheese, some more salt and pepper and mix well then turn off the heat.
- Then coat the bottom of a baking dish with a bit of the marinara sauce and top that with a layer of the noodles ( 4) then top that with ALL the chicken mixture and then top that with the last layer of noodles. Last top the whole thing with more marinara sauce and the rest of your cheese and bake at 350 degrees for 25 minutes!
