Orzo Chicken Meatballs
Ingredients
- 1 pound ground chicken
- 1 slice bread I used 5 grain - cut into cubes - use what you have
- 1/4 cup reduced fat milk
- 1 egg
- 1 TBSP extra virgin olive oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian seasoning
- 1/2 cup grated parmesan cheese
- 2 TBSP uncooked orzo pasta
- 1 TBSP basil I used slightly dried herbs by Gourmet Garden - can find in produce section
- 1 jar ( Mariana sauce ) You could also use a Pomodoro Sauce or Tomato Basil Sauce
- salt and pepper

Instructions
- In a large mixing bowl add in your bread, milk, egg and extra virgin olive oil. Then mix everything together and then let the bread absorb the milk and oil for about 5 - 7 minutes.
- Next, add the onion powder, garlic powder, Italian seasoning, basil, cheese and orzo pasta to the bread mixture and mix everything to combine.
- Last, add the ground chicken to the mixture and season it with some salt and pepper and then mix to combine with a large spoon - do not over mix.
- Then, using an ice cream scooper or spoon about that size scoop out meatballs from the mixture and place them directly into a large skillet with then Marinara sauce in it.
- Then, bring the Marinara sauce to a simmer over medium and simmer for about 20 minutes. Make sure to check one of the meatballs to make sure the orzo pasta inside is completely cooked through. I also like to top them with some more basil over the top before serving them.
- These meatballs are so delicious and a favorite recipe in my house! You can serve these meatballs with pasta, over polenta, with crusty bread or just a salad and I hope you love them as much as I do. :)
