  1. In a large mixing bowl add in your bread, milk, egg and extra virgin olive oil. Then mix everything together and then let the bread absorb the milk and oil for about 5 - 7 minutes.
  2. Next, add the onion powder, garlic powder, Italian seasoning, basil, cheese and orzo pasta to the bread mixture and mix everything to combine.
  3. Last, add the ground chicken to the mixture and season it with some salt and pepper and then mix to combine with a large spoon - do not over mix.
  4. Then, using an ice cream scooper or spoon about that size scoop out meatballs from the mixture and place them directly into a large skillet with then Marinara sauce in it.
  5. Then, bring the Marinara sauce to a simmer over medium and simmer for about 20 minutes. Make sure to check one of the meatballs to make sure the orzo pasta inside is completely cooked through. I also like to top them with some more basil over the top before serving them.
  6. These meatballs are so delicious and a favorite recipe in my house! You can serve these meatballs with pasta, over polenta, with crusty bread or just a salad and I hope you love them as much as I do. :)
