Parmesan Crusted Chicken
Ingredients
- 1 pack Parmesan Crusted Chicken: 1 pack of chicken cutlets - very thin ( you can find them at the grocery store already like this but if not pound regular chicken breast thin )
- 1 cup italian bread crumbs
- 3/4 cup Parmesan cheese
- 1/2 cup flour
- 2 eggs beaten - add a splash of water
- 1 tablespoon light butter
- 2 tablsepoons extra virgin olive oil
- salt and pepper

- Set up a dredding station - 3 bowls in a row - first the flour ( add salt and pepper to the flour) next the eggs and then the breadcrumbs mixed with the parmesan cheese then salt and pepper the chicken pieces on both sides - then toss in the flour- then in the egg and last in the breadcumbs with cheese and make sure each piece is coated well
- Then in a pan on high heat add the butter and oil and make sure the pan is hot - then add in the chicken and cook for about 4-5 minutes per side until they get a golden brown crust and are cooked through and enjoy!
- I serve these with a salad and top them with a little more parmesean cheese!
