Parmesan Zucchini Bites

Ingredients
- 1 cup zucchini grated on a cheese grater
- 1 egg
- 2 tbsp grated Parmesan Reggiano
- 2 tbsp Italian Panko bread crumbs
- 1 tbsp shredded mozzarella cheese
- 1/2 teaspoon garlic powder
- 1 teaspoon lemon zest
- salt and pepper
- Olive oil cooking spray for the baking sheet

Instructions
- Drain the grated zucchini in paper towels and squeeze out all the moisture. Then, transfer the zucchini to a mixing bowl with all the other ingredients and mix to combine.
- Spray a baking sheet with the cooking spray and then place a teaspoon size amount of the mixture in ball like form on the baking sheet. Bake at 400 degrees for 10 minutes and then flip them and cook another 6-8 minutes until golden brown!
- Tip don't put foil on the baking sheet they will stick a little easier if just on a plain baking sheet. These are so AMAZING my daughter loves them!
