Pearl Couscous with Zucchini
super easy
Ingredients
- 1 cup pearl Tri-Colored Couscous
- 1 cup zucchini peeled and chopped
- 2 cups low sodium chicken broth or vegetable broth
- 1/2 lemon
- 1 tbsp fresh basil chopped
- 1 tbsp extra virgin olive oil
- 1 tbsp grated parmesean cheese
- salt and pepper

- In small pot add the chicken broth and bring it to a boil, then add in the pearl couscous and chopped zucchini with some salt and pepper - cover and simmer for 8 minutes and then drain excess broth and place back into the same pot.
- Next add to the couscous, the extra virgin olive oil, half the juice of a lemon, basil and parmesan cheese and mix well to combine. Check it for seasoning and add salt or pepper accordingly and serve!
- This side dish is fast easy and so delicious!
