Pork, Vegetable and Rice Noodle Bowl

Ingredients
- 1/2 pound ground pork I got the lean pork
- 1/2 pack Vermicelli noodles soaked in hot water until soft follow package instructions
- 1/3 cup shelled edamame if frozen - thawed
- 1/3 cup frozen peas and carrots thawed
- 2 tbsp low sodium soy sauce
- 1/4 cup low sodium chicken broth
- 2 teaspoons rice wine vinegar
- 1/2 teaspoon siracha hot sauce
- 1/4 onion chopped
- 1 large clove garlic chopped
- salt and pepper
- toasted almonds optional for topping
- 1 tbsp peanut oil more if needed

- Add peanut oil to a sauté pan with the onions and garlic and cook about 4 minutes and then add in the ground pork with some salt and pepper and cook until no longer pink. Then add in the vegetables, a pinch more salt and pepper and cook another 3 minutes until everything is combined.
- Next add in the softened noodles and the chicken broth, soy sauce, rice vinegar and hot sauce and stir and cook until liquid has reduced a little and everything is combined .
- Last, transfer to a serving bowl, top with toasted almonds and enjoy! This dish is so easy and delicious I make it for lunch all the time! :)
