Pork Chops with Spinach Pesto
Ingredients
- 3 pork chops
- 1 lemon juice
- 1/3 cup extra virgin olive oil
- 2 cups fresh spinach -
- 1 garlic clove chopped
- 1/4 cup Parmesan cheese
- 1/4 cup pine nuts - toasted
- salt and pepper

- For the Pesto: In a food processor add the garlic, toasted pine nuts, spinach and 1/2 of the lemon juice and pulse until smooth - then slowly add in about 1/4 cup of olive oil until you get the consistency you like - last add in the cheese and salt and pepper to taste and mix it one more time and then set aside
- In a zip lock bag add the pork chops - then in a small mixing bow add 2 tablespoons of the olive oil the other 1/2 of lemon juice and some salt and pepper and mix and then pour the marinade over the pork chops and put in the refrigerator for about 30 minutes
- Then in a pan on medium -high heat and the pork chops and cook about 5 minutes per side depending on thickness - top each pork chop with some of the pesto and then serve! This is a great dish for kids my daughter loves it!
