  1. For the Pesto: In a food processor add the garlic, toasted pine nuts, spinach and 1/2 of the lemon juice and pulse until smooth - then slowly add in about 1/4 cup of olive oil until you get the consistency you like - last add in the cheese and salt and pepper to taste and mix it one more time and then set aside
