Pork Tenderlion Stuffed with Asparagus and Cream Cheese
Ingredients
- 1 pork tenderlion cut a long slit in the side to open it up
- 3-4 asparagus ends trimmed off
- 3 tbsp light cream cheese
- 1 teaspoon garlic powder
- 2 tbsp extra virgin olive oil
- 1-2 teaspoon worcestershire sauce
- salt and pepper
- 1/3 cup water

- In a small mixing bowl add the cream cheese, garlic powder and some black pepper and mix well to combine. Then lightly salt and pepper the asparagus and set aside.
- Then take you pork tenderloin with the cut down the side and spread on the cream cheese mixture evenly and top that with the asparagus - 3-4 pieces depending on the size of your pork.
- Close the pork with kitchen string or a few toothpicks to hold everything inside and then drizzle on 2 tbsp of olive oil and just a little pinch of salt and more black pepper and rub that all over both sides of the pork.
- Then in a large sauté pan on medium-high heat add the pork tenderloin and sear it on both sides for about 2 minutes to get a brown crust.
- Next, transfer the pork to a baking dish and add the teaspoon of Worcestershire sauce over the top and bake at 375 degrees for 30 minutes or until the juices run clear and serve. :)
- Cooks tip : Do NOT over salt this pork bc the worcestershire sauce is salty and also add a little bit of water around the sides of the pork half way through cooking to keep it moist - this will also create a sauce. :)
