Portobello Mushroom Parmesan

Ingredients
- 1 pack Portobello Mushrooms 5-6
- 1/2 jar healthy marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup fresh grated parmesan cheese
- 2 tbsp extra virgin olive oil
- 2 tbsp Italian flat leaf parsley
- 1 tbsp basil seasoning in a tube can find by herbs in produce area
- salt and pepper
- Olive oil cooking spray

Instructions
- Season both sides of the mushrooms with salt and pepper and add 1 tbsp of the oil to a sauce pan with the tbsp of basil in a tube and cook first side of the mushrooms for about 3 minutes and while cooking the bottom drizzle the tops with some more olive oil and then flip and cook another 3 minutes on the other side.
- Then add some marinara sauce to the bottom of a baking dish and place the mushrooms in the dish. Next, top each mushroom with some more sauce - then parsley - then some mozzarella cheese and then some parmesan cheese. Last, spray a little olive oil cooking spray over the tops and bake at 400 degrees for about 10 minutes until the cheese is melted and bubbly!
- This is a great vegetarian dish and it is so good you will not miss the meat! :)
