Potato Salad with Dill
super easy
Ingredients
- 1 bag baby gold potatoes washed
- 2-3 tbsp fresh dill chopped
- 3 tbsp light mayo more if needed - as much as the consistency you like
- 1 tbsp real mayo :) I like to add one to give it more flavor
- 2 hard boiled eggs chopped
- 1 tbsp dijon mustard
- 2 tbsp red onion chopped fine
- 2 green onions chopped- one for inside / one for garnish
- salt and pepper

Instructions
- Boil the potatoes until tender - drain and then cut them into bite size pieces. Boil the eggs in water for 8 minutes - rinse with cold water - peel and chop them and set aside.
- Meanwhile, in a large mixing bowl add all the ingredients except the egg and potatoes and mix well. Then add in the potatoes and egg and gently toss and then put it in the refrigerator for a few hours. Last, before serving garnish with the other chopped green onion and enjoy!
- This potato salad is a hit in my house and it is so delicious! :)
