  1. Boil the potatoes until tender – drain and then cut them into bite size pieces. Boil the eggs in water for 8 minutes – rinse with cold water – peel and chop them and set aside.
  2. Meanwhile, in a large mixing bowl add all the ingredients except the egg and potatoes and mix well. Then add in the potatoes and egg and gently toss and then put it in the refrigerator for a few hours. Last, before serving garnish with the other chopped green onion and enjoy!
  3. This potato salad is a hit in my house and it is so delicious! :)
