  1. Halve the potatoes and then boil them for about 15 minutes until fork tender and set aside - after they cool slightly I cut the halves once more and then add them to a large mixing bowl with the green onions
  2. I had harb boil eggs and bacon left over from breakfast but if you don't - cook your eggs and bacon and then chop and add the the mixing bowl with the potatoes- season everything with salt and pepper
  3. Next, in a small mixing bowl add the mayo, mustard and teaspoon of lemon juice and whisk well to combine and then add it to the mixing bowl and toss everything around and mix well
  4. Check your potato salad for seasoning to see if it needs more salt and pepper and transfer to a serving bowl and enjoy!
