  1. Wash and strub clean the beets and cut off the top and cover with 1-2 tablespoon olive oil then wrap them in tin foil and put it in the oven at 375 degrees - cook about 45-50 minutes ( I always roast more then 1 beet and use it for many dishes not just salad)
  2. Once they come off the heat and cool scrape the skin off and set aside ( take one and chop it for the salad )
  3. Next in a pan on low heat add the walnut pieces and roast 2-3 minutes then add the teaspoon of honey and cook another minute until they are coated and set aside
  4. Then in a salad bowl add the lettuce, goat cheese, walnuts and chopped beets and set aside
  5. In a small mixing bowl add all the ingredients for the dressing and whisk well to combine ( if you like a lot of dressing double this recipe )
  6. Last top the salad with the dressing and enjoy! This is one of my all time favorite salads I've created! :)
