  1. 1. For the beet: Wash and scrub clean the beet and cut off the top and cover with 1 tablespoon olive oil and some salt and pepper then wrap it in aluminum foil and put it in the oven at 375 degrees - cook about 45 minutes - once it comes off the heat and cool -then scrape the skin off and cut it into slices and then set aside ( I make these once a week and leave them in the refrigerator for making soups, salads etc
  2. 2. Next in a small mixing bowl add in the oil, honey, vinegar and some salt and pepper and mix well to combine
  3. 3. Add the salad to a serving tray and top it with slices of the mozzarella and the beets -add the pine nuts, dressing and some more black pepper and enjoy!!
  4. 4. Tip - toast the pine nuts either on the stove top on low in a small pan or you can put them in a toaster oven on 300 degrees on a pan or some foil - they only take a few minutes :)
