For the beet: Wash and scrub clean the beet and cut off the top and cover with 1 tablespoon olive oil and some salt and pepper then wrap it in aluminum foil and put it in the oven at 375 degrees - cook about 40 minutes - once it comes off the heat and cool -then scrape the skin off and cut it into slices and then set aside ( I make these once a week and leave them in the refrigerator for making soups, salads etc
Next, add the beet slices, cubed watermelon, sliced onion and feta cheese to a serving platter.
Then in a small mixing bowl add the vinaigrette ingredients and whisk well and then pour it over salad and enjoy!
