Roasted Cauliflower with Parmesan

Ingredients
- 1 head cauliflower florets cut off and the sliced
- 1 large shallot sliced thin
- 2 large cloves garlic smashed but left whole
- 3 TBSP extra virgin olive oil
- 6 sprigs fresh thyme
- 1/3 cup fresh grated parmesan cheese
- salt and pepper

Instructions
- Cut the head of cauliflower into florets and then slice each floret and place on a large baking sheet. Next, add the sliced shallot and garlic pieces.
- Then add the olive oil over everything and and toss all-around to coat evenly, add the thyme sprigs all around the top and season with kosher salt and black pepper.
- Pre-heat the oven to 400 degrees and roast for about 25 minutes and then open the oven and stir the cauliflower around. Next, sprinkle with 1/3 cup parmesan cheese and roast the cauliflower for 10-15 minutes more and enjoy!
