Roasted Fingering Potatoes

Ingredients
- 1 bag fingerling potatoes
- 1 TBSP butter more if you like
- 2 TBSP extra virgin olive oil
- 1 teaspoon fresh dill
- 1 TBSP fresh chives reserve some for at the end to top
- 1 teaspoon fresh thyme
- 3 TBSP fresh grated Parmesan Reggiano
- 2 cloves garlic chopped
- salt and pepper

Instructions
- Boil the potatoes for 7 minutes in water and then let cool slightly.
- Next, chop your garlic and herbs .... I have all my fresh herbs in a pot on my deck so it's so easy!!! :)
- Once your potatoes have cooled slightly - I cut the larger ones in half and place them all in a large baking dish. I top them with the olive oil, garlic, herbs and some salt and pepper and toss all around to coat.
- Next, I add the butter breaking it into little pieces over the top and add 2 TBSP of the parmesan cheese.
- Then bake at 400 degrees for 25 minutes turning them half way - take them out top with the remaining cheese and chives and serve!!
