  1. Boil the potatoes for 7 minutes in water and then let cool slightly.
  2. Next, chop your garlic and herbs .... I have all my fresh herbs in a pot on my deck so it's so easy!!! :)
  3. Once your potatoes have cooled slightly - I cut the larger ones in half and place them all in a large baking dish. I top them with the olive oil, garlic, herbs and some salt and pepper and toss all around to coat.
  4. Next, I add the butter breaking it into little pieces over the top and add 2 TBSP of the parmesan cheese.
  5. Then bake at 400 degrees for 25 minutes turning them half way - take them out top with the remaining cheese and chives and serve!!
