Roasted Heirloom Tomato Pasta

Ingredients
- pack baby Heirloom Tomatoes cut in half
- 2 cloves garlic smashed
- 2 tbsp fresh basil
- 1/4 cup extra virgin olive oil
- 2-3 tbsp fresh grated parmesan cheese
- pasta of your choice I used TriColor Egg Pasta Nets - brand is Grand' Mere
- salt and pepper

- In a baking dish add the tomatoes, smashed garlic, basil, olive oil and some salt and pepper and roast at 375 for about 15 minutes.
- Meanwhile, cook your pasta to package instructions and set aside - do not rinse and transfer back to the pot you cooked it in.
- Once the tomatoes are done , take out the garlic and immediately pour the tomatoes and all the juice over the pasta and toss to combine. If it looks a little dry drizzle some more olive oil over the top.
- Transfer the pasta to a serving dish, top with parmesan cheese and enjoy! :) This is an easy, light and delicious week day or weekend dinner!
