  1. In a large mixing bowl add in the potatoes, olive oil and black pepper and mix well to combine
  2. Pre- heat the oven to 400 degrees and then add the coated potatoes to a large baking sheet covered with foil. Bake the potatoes for about 25- 30 minutes until they are browned and them flip them over.
  3. Once the potatoes have been flipped then top the other side with the grated parmesan cheese.
  4. Then bake them for another 8-10 minutes until the cheese is melted and they are golden brown like this.
  5. Then transfer the potatoes to a serving bowl and I like to top mine with some parsley and a bit more parmesan cheese and enjoy!
