Roasted Sweet Potato Soup

Ingredients
- 3 sweet potatoes peeled and cubed
- 1/2 white onion chopped
- 3 garlic cloves chopped
- 1-2 tbsp fresh thyme
- 1 tbsp light butter
- 3 tbsp olive oil extra virgin
- 1 tbsp light cream cheese
- 5 cups low sodium chicken stock or vegetable broth
- salt and pepper

Instructions
- Pre-heat oven to 375 degrees. On a baking sheet lined with foil toss sweet potatoes with 2 tablespoons of the olive oil, 1 tablespoon fresh thyme and some salt and pepper and cook about 25 minutes until tender and you can put a fork through them
- Meanwhile, in a pot on medium heat add the butter and other tablespoon of oil and cook the onion with a pinch of salt for about 6 minutes and then add the garlic and cook another 3 minutes - next add in the roasted sweet potatoes, chicken stock , some more thyme and some salt and pepper and cook at a simmer for about 10 minutes until all the flavors combine
- Last add in the cream cheese and cook about 2 minutes until it melts - then with a hand held immersion blender - blend the soup until smooth and serve!
