  1. Pre-heat oven to 375 degrees. On a baking sheet lined with foil toss sweet potatoes with 2 tablespoons of the olive oil, 1 tablespoon fresh thyme and some salt and pepper and cook about 25 minutes until tender and you can put a fork through them
  2. Meanwhile, in a pot on medium heat add the butter and other tablespoon of oil and cook the onion with a pinch of salt for about 6 minutes and then add the garlic and cook another 3 minutes - next add in the roasted sweet potatoes, chicken stock , some more thyme and some salt and pepper and cook at a simmer for about 10 minutes until all the flavors combine
  3. Last add in the cream cheese and cook about 2 minutes until it melts - then with a hand held immersion blender - blend the soup until smooth and serve!
