Roasted Tomato Bruschetta with Crostini
  1. Slice bread on and angle and brush the tops with olive oil and sprinkle with salt and pepper – place on a baking sheet and bake at 400 degrees for 8-10 minutes until brown and crispy.
  2. On a cutting board cut tomatoes in four and with a sharp knife slowly cut under the bottom to remove the skin and then chop and place on a baking sheet lined with foil. Next add the thyme, parsley, olive oil, sugar, garlic powder and a good amount of salt and pepper and then toss all around to coat evenly.
  3. Bake at 375 dregs for 35-40 minutes until they are tender and broken down. Once the tomatoes are done place in a bowl and toss with the fresh basil and serve!
