Roasted Tomato Orzo with Basil

Ingredients
- 6 Campari tomatoes
- 1/2-1-3 extra virgin olive oil
- 1/2 teaspoon organic garlic powder
- 1/4 cup fresh basil chopped
- 1 cup tri-colored orzo
- 3 tbsp fresh grated parmesan cheese
- salt and pepper

- On a baking sheet add the tomatoes, olive oil, garlic powder and some salt and pepper and mix all around to coat evenly- roast at 375 degrees for 20-25 minutes until the tomatoes start to burst.
- Meanwhile- cook the orzo in salted water to package instruction - drain and transfer to a large mixing bowl.
- Then add the tomatoes with the oil and everything to the cooked orzo and mix and break up the tomatoes as you stir. The add in the basil and parmesan cheese and enjoy! :)
