Rosemary Roasted Potatoes

Ingredients
- 1 bag baby gold potatoes
- 2-3 tbsp rosemary infused olive oil can find this everywhere now - olive oil stores , Whole Foods
- 1 large garlic clove grated on cheese grater or minced
- 2 tbsp flat leaf parsley chopped
- salt and pepper

Instructions
- Wash potatoes and dry them then add them to a mixing bowl and add in the olive oil, garlic and some salt and pepper and toss all around to combine.
- Next, transfer the potatoes to a baking sheet and roast at 400 degrees for 30 minutes I open the oven and toss them around half way through.
- The last few minutes I open the oven and toss around the chopped parsley and then transfer to a serving bowl and enjoy! :) This recipe is a very easy weekday or weekend side dish!
