Salsa Fresca
super easy
Ingredients
- 1 pint Plum tomatoes chopped
- 1 corn on the cob
- 1/2 can black beans drained and rinsed
- 1/3 cup fresh Cilantro add more if needed
- 1/3 cup red onion chopped fine
- 1 clove fresh garlic grated on cheese grater or chopped fine
- 1 lime juice - use more if needed
- salt and pepper

Instructions
- Cook the corn on the cob in boiling water for 2 minutes and then take out and cut it off the cob and add it to a mixing bowl.
- Then add all the other chopped ingredients to the bowl and squeeze lime juice all over and check for seasoning. Let it marinate for at least 15-20 minutes before serving! :)
- I like to serve this with organic blue corn chips and sometimes I also add chopped mango to the salsa and serve this over fish!
