Instructions
  1. Cook the corn on the cob in boiling water for 2 minutes and then take out and cut it off the cob and add it to a mixing bowl.
  2. Then add all the other chopped ingredients to the bowl and squeeze lime juice all over and check for seasoning. Let it marinate for at least 15-20 minutes before serving! :)
  3. I like to serve this with organic blue corn chips and sometimes I also add chopped mango to the salsa and serve this over fish!
