Sautéed Crispy Parmesan Chickpeas

Ingredients
- 1 15 oz can chickpeas drained and rinsed
- 2 tbsp extra virgin olive oil
- 2 tbsp grated parmesan cheese preferred- Reggiano
- 1/2 teaspoon garlic powder
- 1/8 teaspoon dried ground mustard
- 1 teaspoon flat leaf parsley chopped fine
- salt and pepper

Instructions
- Drain and rinse chickpeas and dry with paper towels and set aside. Heat a sauté pan on medium heat and add the olive oil and then the chickpeas and cook while shaking the pan every few minutes until the chickpeas are golden brown and crispy- about 15 minutes.
- Meanwhile, in a mixing bowl add the cheese, parsley, dried mustard and some salt and pepper and mix well to combine. Once the chickpeas are cooked add them to the mixing bowl and toss to coat the chickpeas and the transfer to a serving dish and enjoy! :)
