  1. In a small sauté pan add the shallots, garlic, 1 TBSP of the olive oil and a pinch of salt - cook for about 8 minutes until tender.
  2. Next, add the pumpkin, garbanzo beans, cream cheese, sautéed onion and garlic , some salt and pepper and the rest of the olive oil to a food processor and pulse until smooth.
  3. Last ,check your hummus for salt and pepper and adjust the seasoning as needed and then serve! I serve this with organic blue corn chips and it is perfect for Halloween and fall!
