Shrimp and Cucumber Quesadilla
Ingredients
- 6 -8 shrimp peeled and deveined
- 1 mini "cuke" cuccumber sliced thin - I got these at Kroger
- 1/2 cup Mexican blend shredded cheese
- 2 soft tortillas I used whloe wheat ( all kinds of healthy ones available now so use your favorite )
- 1/2 lime juice
Spice Mix:
- 1 tesp cumin
- 1 tesp oregano
- 1 tesp onion powder
- 1/2 paprika
- 1/2 tesp cayenne papper
- 1/2 tesp salt
- 1 tbsp olive oil
- Coconut oil baking spray ( I got mine at Trader Joe's) but use what you have

- In a small bowl mix all the spices together and then add about 1 teaspoon or so of the spice mixture to a zip lock bag with the olive oil and the shrimp and let marinade in the refrigerator for about 15 minutes
- Then slice the cucmmber and set aside.
- In a sauté pan on medium heat cook the shrimp about 4 minutes per side or until done - then take off the heat and I cut each shrimp in half vertically to make them thin and easy to eat inside the quesadilla
- Next in a large pan on medium- high heat spray the cooking spray and then add one half of the tortilla and add the cheese, shrimp and the cucumber and then top it with the other tortilla
- Cook each side about 3-4 minutes or until it gets golden brown flipping it with a spatula and then using a pizza cutter make 4 pieces and enjoy!
