Shrimp and Cucumber Quesadilla

  1. In a small bowl mix all the spices together and then add about 1 teaspoon or so of the spice mixture to a zip lock bag with the olive oil and the shrimp and let marinade in the refrigerator for about 15 minutes
  2. Then slice the cucmmber and set aside.
  3. In a sauté pan on medium heat cook the shrimp about 4 minutes per side or until done – then take off the heat and I cut each shrimp in half vertically to make them thin and easy to eat inside the quesadilla
  4. Next in a large pan on medium- high heat spray the cooking spray and then add one half of the tortilla and add the cheese, shrimp and the cucumber and then top it with the other tortilla
  5. Cook each side about 3-4 minutes or until it gets golden brown flipping it with a spatula and then using a pizza cutter make 4 pieces and enjoy!
