Shrimp Salad in Endive Leaves

Ingredients
- 2 cup cooked shrimp chopped
- 2 tbsp red onion diced
- 2 tbsp light mayo add more if needed
- 1 tbsp champagne vinegar
- 1 tesp dijon mustard
- 1-1/2 tbsp chopped dill ( to taste )
- salt and pepper
- Endive leaves - cleaned / ends cut off

Instructions
- In a mixing bowl add in the shrimp, mayo, vinegar, dill, mustard, onion and some salt and pepper to taste and mix well- then cover and put in the refrigerator for a few hours.
- Before serving - place a spoonful of the shrimp salad in each endive leaf and serve! This recipe is awesome!!!
