Simple Shrimp Pasta
super easy
Ingredients
- 1/2 pack Guten Free Spaghetti or any pasta you like
- 10 large raw shrimp peeled and tails off
- 1-2 TBSP capers as much as you like to taste
- 1/2 14 oz can cherry tomatoes without the sauce it comes in - I used the brand Mutti
- 1 cup chicken broth
- 1/2 TBSP garlic powder
- 1 TBSP fresh basil torn
- 3 TBSP extra virgin olive oil more if needed
- 1-2 TBSP fresh grated parmesan cheese for topping
- 1 TBSP lemon juice
- salt and pepper

Instructions
- First, add 1 TBSP of olive oil to a pan on medium- high heat and season the shrimp with the garlic powder and some salt and pepper and cook for about 5 minutes until almost cooked through. Then take the shrimp out and set aside and also start to cook your pasta to package instructions. If you use gluten free like me make sure you rinse it under cold water to remove all the starch.
- In the SAME pan add in the other 2 TBSP of olive oil, the capers and canned cherry tomatoes and start to cook them until they start to burst.
- Then add in the lemon juice and chicken broth with some more salt and pepper and cook for about 5 minutes until it starts to reduce.
- Next add in your cooked pasta and shrimp back into the pan with some fresh basil and start to toss everything together. Cook this for a few more minutes until the pasta has absorbed the sauce and the shrimp finishes cooking through.
- Then simply transfer to a serving bowl top with some fresh grated parmesan cheese and enjoy!
