Skillet Potatoes with Herbs
super easy
Ingredients
- 2 potatoes scrubbed clean and sliced thin
- 1/4 cup red pepper chopped
- 1/2 medium onion - chopped
- 2 cloves garlic
- 2 tbsp extra virgin olive oil 1/2 of the tbsp - I used infused oil - Herbs de Provence
- 1 tbsp fresh rosemary
- 1 tbsp flat leaf parsley
- 1 tbsp fresh chives
- a pinch crushed red pepper flakes
- salt and pepper
- 1/2 cup water more if needed

Instructions
- Heat the oil in the skillet and add in the onions, red pepper a pinch of salt and the oil and cook for about 5 minutes and then add in the garlic and cook another 2 minutes.
- Next, add in the potatoes and cook about 15 minutes covered adding a little water at a time as needed - then add in the herbs, pinch of red pepper flakes and some mores salt and pepper and continue to cook for another 15 minutes add the water a bit at a time and moving them around to make sure they cook evenly.
- Check for seasoning and garnish with more chives and serve!
- This side dish is great for breakfast also and I add fried eggs on top! :)
