Slow Cooker Chicken and Mushroom Rice
Ingredients
- 2 boneless chicken breasts
- 1 pack button mushrooms quartered
- 2 stalks celery chopped
- 1 carrot peeled and chopped
- 1/2 onion chopped
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 TBSP basil I use Instantly Fresh Herbs by LITEHOUSE - can find this in the produce section
- 1 TBSP light butter I use Brummel & Brown made with real yogurt
- 1 splash white wine ( optional but I love it in this recipe )
- 1 TBSP worcestershire sauce
- 1 TBSP Parmesan cheese
- 1 cup long grain white rice
- 2 & 1/2 cups low sodium chicken broth add more if needed for the rice
- salt and pepper

Instructions
- Place all the ingredients in the slow cooker except for the rice on high and cook for about 2 hours. Then add in the white rice after 2 hours and continue to cook until the rice is soft and everything is combined.
- Remember once the chicken is cooked pull it out and shred it with 2 forks and out in back into the slow cooker. Check this recipe for seasoning to make sure it doesn't need more salt and pepper before serving and enjoy!
