Slow Cooker Lightened -Up Split Pea Soup

Ingredients
- 1 lb bag split peas rinsed
- 8 oz 96% fat free cubed ham or you can use a smoky leaner ham
- 2 stalks celery chopped
- 3/4 cup carrots chopped
- 1 large white onion - chopped
- 3-4 cloves garlic
- 1 32 oz box low sodium chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 cups water
- 1/2 lemon the juice
- chives for garnish
- salt and pepper

Instructions
- Place all the ingredients in the slow cooker on high for 4 and 1/2 hours until the peas have broken down and are creamy. Before serving squeeze in the lemon juice and check for seasoning to see if it needs more salt and pepper, top with some chives and enjoy! :)
