Season each short rib with salt and pepper and place in the bottom of the crockpot and then top it with the rest of the ingredients - except the pasta and cheese obviously :)
Place slow cooker on low and let cook for 5 hours.
Next cook the pasta in salted water according to package instructions and drain and set aside.
Then with a large spoon remove the shorts ribs and place in a bowl and with 2 forks shred the meat and set aside.
Last spoon the vegetable mixture and sauce into a blender and blend until smooth and then pour it back into the crockpot with the meat and stir. Then serve it over the pasta and top with parmesan cheese and enjoy!!!
