Slow Cooker Tuscan Chicken Stew
Place your chicken thighs, shallots, garlic powder, ground fennel seed , potatoes, Italian seasoning and zucchini in the slow cooker and season all of it with salt and pepper.
Then add in your can of diced tomatoes, low sodium chicken broth and bay leaf and season the tomatoes with a bit of salt and pepper as well. Turn your slow cooker on high and set it for 4 hours .
After your slow cooker has been cooking for 2 hours add in the can of cannellini beans and the fresh basil. Next, stir everything around and let it continue to cook for 2 more hours.
When your chicken stew is at the end of your cooking time, shred the chicken inside the slow cooker with two forks and remove the bay leaf.
Then simply transfer your stew to serving bowls, top with parmesan cheese and fresh basil and enjoy!
