Smashed Herbed Red Potatoes

Ingredients
- 1/2 bag red potatoes double recipe for more people
- 1 tbsp fresh chives chopped
- 2 tbsp flat leaf parsley chopped
- 1 tbsp low fat milk
- 1 tbsp low fat butter I used brumel and brumel yogurt butter
- salt and pepper

Instructions
- Wash the potatoes and cut them in half and boil in water for about 8-10 minutes until tender. Drain the potatoes and return them to the same pot and add the milk, butter, herbs and salt and pepper and smash until mixed and check for seasoning.
- This is a great side dish that adults and kids will love! :)
