Mashed Potatoes and Carrots
super easy
Ingredients
- 1 potato peeled and cut into cubes - about a cup ( I used yukon gold )
- 1 cup carrots chopped
- 1 tbsp light butter
- 1 tbsp unsweetened almond milk
- 1 tbsp 1/3 less fat cream cheese with chives
- 1 green onion bottom part chopped for topping
- salt and pepper

Instructions
- In a pot of salted water add the potato and carrot and bring to a boil and cook for 15 minutes until tender- drain and return to the pot. Then add in the butter, cream cheese, milk and some salt and pepper and smash with a potato masher. Last, transfer to a serving bowl and top with the green onion and enjoy!
- This recipe is for two people, so double it for 4 people - this side dish is awesome and the only way my daughter will eat carrots! :)
