Soba Noodles with Chicken and Peanut Sauce
Ingredients
- 1 8 oz Buckwheat Soba noodles
- 1 pack chicken tenders cut into bit size pieces
- 1 mini cucmber strips made with vegtable peeler
- 1 small carrot strips made with vegtable peeler
- 1/2 or more cup edamame - shelled defrosted
- 1/2 cup low sodium chicken broth
- 1 TBSP extra virgin olive oil
- 1 teaspoon garlic powder
- cilantro & scallions for topping -chopped
- salt and pepper
Peanut Sauce
- 1/4 cup healthy creamy peanut butter
- 1/4 cup low sodium chicken broth
- 1/2 teaspoon siracha hot sauce
- 1 tbsp low sodium soy sauce
- 1 teaspoon fresh grated ginger root
- 1 TBSP honey
- 1 large lime juice

- For the Soba Noodles: Add them to a pot of UNSALTED boiling water and cook them for 7 minutes - then drain them and transfer them to a bowl of cold water and with your hands move them around for a minute or so and then put them back into the colander and rinse with cold water again. Set aside.
- Meanwhile, add the olive oil to a hot sauté pan and season the chicken pieces with salt, pepper and the garlic powder and cook them for about 4 minutes on each side until they are browned and cooked through - then take them out of the pan and set aside. Cover to keep warm.
- Then in a mixing bowl add the peanut sauce ingredients and mix well. Next add that sauce into the same sauce pan you cooked the chicken in and add in the 1/2 cup chicken broth, soba noodles, chicken, carrot, cucumber, half the scallions and the edamame and cook for a few minutes to warm everything and serve!
- I top this with cilantro and some extra lime wedges and it is so delicious!
